Do you have an office Christmas party or a Christmas lunch that you need a quick and easy recipe for? Try out this Broccoli & Cheese Balls recipe served with a side of ranch to dip them in! You won’t even feel guilty for eating them because they have a vegetable in them, so they have to be healthy right?
2 (12 oz.) Bags of Frozen Broccoli
2 to 3 Shallots
3 cups of shredded Colby and Cheddar Cheese
3 tablespoons of Minced Garlic
1 (8 oz.) can of Planko Crumbs (should equal 3 cups)
A dash of Salt
A dash of Pepper
Ranch Dressing for dipping
*If you are doing low carb you could substitute the Planko Crumbs with Plain Pork Rinds*
Preheat oven at 390 degrees. Cook frozen Broccoli as directed on the bag in the microwave. While broccoli is cooking, place shallots in a food processor and chop them up. Next, drain any water off of cooked broccoli, and then place it in a food processor along with the onion shallots with a dash of pepper and a dash of salt to taste. Chop up ingredients. If you do not have a food processor, just make sure you chop your broccoli into fine pieces as well as your onion shallots. Then, remove broccoli and onions from the processor, and place in a bowl. Add eggs, cheese, and garlic. Stir. Now, add your Planko crumbs. Stir once again. Next, spoon and form into small balls about a tablespoon at a time. Spray a cookie sheet with nonstick cooking spray and place broccoli balls onto your pan. Bake at 390 degrees for approximately 25 minutes or until the balls are slightly crisp and golden on the outside. Serve while warm with a side of ranch dressing for dipping sauce! Enjoy!
*Tip: This recipe makes several broccoli & cheese balls. I suggest cutting the recipe in half or make the larger batch just in case you need a large helping. I went ahead and made the large batch. Then, I froze the leftovers in my freezer in a gallon zip lock bag. The next event I had and needed a quick side dish, I simply removed them from the freezer a few hours before I needed to warm them and set them out on the counter to unthaw some. Then after unthawing some, I placed the balls into the oven at 350 for about 10 minutes. They still tasted just as fresh as the first time I had cooked them!
