By Sheri Hopkins
Hello everyone!!! I guess we got some storms in the River Valley last night. The Widow Hopkins slept through it all. I thought I heard some thunder, but I must have fallen back asleep. Hope all you guys had a wonderful Father’s Day. I lost my father when I was 18, and let me tell ya, you never quit missing your dad. I decided to cook lunch for my older brother, Larry, and his wife, Peggy. I cooked turkey breast, meatloaf, mashed potatoes and gravy, dressing, green beans, mac and cheese, and rolls. For dessert, I made coconut cake. I always cook meatloaf because it’s my brother’s favorite. We were eating out when we went to Nashville, and our waiter was kind of slow and not really checking on us. I said, “I wonder what his name is so I could call him over.” My brother says, “Well, it sure ain’t Speedy Gonzales!!” We all cracked up laughing. If you’re a Wagoner, you don’t even have to try to be funny—it just comes natural, like falling down and such. When my nephews, Michael and Jason, were together, I could sit and listen to them for hours. They were hilarious. There is not a sitcom that Jason could not quote, especially The Andy Griffith Show. Another thing about Wags is they love their pets. We treat them like children. My brother, Larry, has a Chihuahua that is so fat she looks like a roll of bologna with a head on it. Back a few years ago, there was a dog dumped at the Dollar General in Mansfield. My great-nieces saw it on Facebook and wanted to go get it. Rachel told Rheding to go get the dog and take it to her house until she got off work. Rheding still lived at home, and Michael, her dad, said, “I forbid you to go get that dog.” Welllll… Rheding went and got the dog anyway. They gave it a bath, and she sent us a picture a little later. Michael had it riding on his shoulders while taking it to his house. They got the dog home, cleaned it up, and fed it. Now it is the dog we all know and love called Baker. Y’all remember the show Lifestyles of the Rich and Famous? Two weeks after Baker was rescued from living in squalor, she was on the beach in Florida on vacation with Michael and his family. She turned out to be the smartest dog they have. We have all had a good laugh over all that. Love your fur babies, and if they are scared of fireworks, don’t let them out on the Fourth of July. Have a blessed week, and Happy Fourth of July!
NUTTER BUTTER DELIGHT
48 Nutter Butter Cookies (two packages) 13.4 oz. box of instant vanilla pudding 2 cups cold milk 1/4 cup peanut butter 8 oz. tub of Cool Whip 1/2 cup Reese’s Pieces for sprinkling Line the bottom of a 9×13 pan with half the Nutter Butter cookies in a single layer. In a large bowl, combine instant pudding mix with two cups of cold milk. Whisk until a soft pudding forms. Whisk in the peanut butter till smooth. Gently fold in the Cool Whip. Layer half of this mixture onto the cookies in the pan. Layer the other half of the Nutter Butter cookies on top with the remaining pudding mixture. Refrigerate for four hours and sprinkle Reese’s Pieces on top. I would save a couple of cookies and crumble them on top, too. Enjoy, have a blessed week!
