“Just Roll with It” Serving up Recipes and Humor

Hello everyone! I never thought I would say this but……..“Such beautiful weather we are having in the River Valley.” I was looking out the window at work and I have been seeing the rides and trailers go by towards Ft. Smith for the Arkansas Oklahoma Fair. A rush of memories came flying back to me.
We always, always went to the fair. If my brother, Larry and his wife were going somewhere I always tagged along. If they went, I tried to go along with them and their three kiddos Jason, Michael and Kelly. We went to movies and fairs and theme parks, if there was a wheel turning, I was on it.
We all loaded up and went to the Ft. Smith Fair one year and it was when they had the so called freak show. They had the fat lady (which I qualify for now), the fat man, freak boy and dog Sparky and all kinds of stuff. But what stands out in my mind was the fat man. They would announce, “Watch the fat man kill a Coke.” Then they would say, “Watch the fat man eat a whole cake.” Then my favorite, “Watch the fat man dance.” This consisted of him holding his arms out and making circles with his hands. This is how I dance to this day.
Now Ronnie Black would sneak in and see the fat lady Fannie Brown. She would say, “I eat five whole chickens a day, I roller skate with my husband every night.” Then she would turn around and slap her behind and say “Sock it to me! Sock it to me!”
The things you could see at a fair when we were kids. It is etched in your memory and all it takes is a fair ride going down the highway to bring back those memories.
Fair food is the best, I love the foot long corndogs and the funnel cakes and my all time favorite is the cotton candy. If you ever went to the Ft. Smith Fair you couldn’t leave without going to Old McDonalds Farm. I loved to watch them chickens and pigs. Something about animals doing tricks draws folks in. I remember going to Dogpatch and that chicken played the piano, I wanted to watch it over and over.
Ya’ll go to the fair and eat some good old fair food.

No Bake Pineapple Dream Dessert
10 ounces of shortbread cookies, crushed
8 tablespoons of butter melted
13.4 ounce box instant vanilla pudding mix
20 ounce can crushed pineapple (not drained)
8 ounces Cool Whip divided
Mixed the crushed cookies with the butter an press in 9×9 pan.
Stir together pudding mix, pineapple and let set for a few minutes then add half the Cool Whip and spread evenly over crust.
Top with remaining Cool Whip and more crushed cookies for decorations.
This is a light easy dessert and I love pineapple.
