Chilly Temperatures Makes For Great Yummy Soup Weather

Whenever it is cold outside, I have a few comfort foods that I love to cook.  One being tortilla soup.  This is one of our family favorites that we love to indulge in during wintery weather.  Years ago, I use to travel to Mexico for mission trips twice a year.  One time, while I was there, I went to a local restaurant and ordered Tortilla Soup.  It was delicious!  I was determined to find the recipe once I returned to the United States.   I have looked over several recipes and finally mastered one of my own.  It took much combining and taste testing until I finally managed to create a recipe that is my own and I love!

So, if you are looking for a way to keep those taste buds warm and your belly full, try this recipe for a large pot of Tortilla Soup!

Ingredients:                

  • 2 Cans of Chicken Broth
  • 1 Can of Cream of Chicken Soup
  • 1 Can of Tomato Soup
  • 1 Can of Original Rotel
  • 1 Can of Mexican Rotel (If you can’t find the “Mexican” Rotel, then you can just use two cans of original.)
  • 1 Small Can of Green Chilies
  • 4 Large Chicken Breasts (Boiled, Shredded, and Deboned)
  • 2 Tablespoons of Minced Garlic
  • 2 Tablespoons of Minced Onion
  • A Dash of Garlic Salt

Toppings for Tortilla Soup:

  • Tortilla Chips
  • Shredded Cheese
  • Jalapenos (Optional)
  • Avocado (Optional)
  • Sour Cream (Optional)

Directions:

Rinse and clean chicken.  Submerse chicken in water in a large pot. Then, boil chicken in water on high for an hour or completely done.  Remove fully cooked chicken from the pot and debone.  Now, use another large pot and add shredded chicken and 2 cups of the broth from the pot the chicken was cooked in.  Next, add all other can ingredients and spices.  Stir each one in slowly.  Bring your soup now to a rolling boil with constant stirring.  Boil for two to three minutes while stirring.  Then, bring heat back down to low, cover and simmer the soup for 10 to 30 minutes.  The longer it can sit and simmer, the better the flavor.  However, if you are in a hurry, at least simmer for 10 minutes before eating.  While simmering, make sure to stir occasionally to prevent sticking.

Some recipes for Tortilla Soup call for black beans, red kidney beans, or rice added to the soup.  This might be an option for you, but we do not add them into ours.

Once your soup is ready to eat, place tortilla chips in your soup bowl. Then, add your soup on top. Last, sprinkle with cheese as well as any other toppings you would like! Enjoy!
