“Just Roll with It” Serving up Recipes and Humor

Hello everyone! Hello everyone!! Are there any more folks as tickled as I am about this nice weather?? Love it so much. Ya’ll know my nephew is a bird watcher. He loves birds and even has a shirt that says, “Bird Nerd,” on it. Someone asked me the other day, “What is your favorite bird?” I couldn’t think. They put me on the spot, and I said, “Rotisserie chicken.” It is a bird, just a cooked one. Sometimes I get caught off guard—not very often, but it does happen. My mind usually goes to food. I love to eat, and ya’ll know that.
My bank also called me about some suspicious activity on my bank account. It was a gym membership. Ha ha!! You know this girl is not going to a gym, period.
I wonder what the statute of limitations is for a small crime. I guess I need to ask my nephew that question. Years ago, when my husband was in the hospital and he was very sick, he had Gillian Barre Syndrome. He almost died, and I was a basket case. I was pulling out of my parking spot at St. Edwards Hospital and backed into a parked car. Keep in mind, my nerves were shot, and I didn’t have time to mess with calling the cops. I got out and checked it all out, and I couldn’t see any damage, so I just drove off into the wild blue yonder.
That was several years ago. Would I do it again?? Of course I would if I couldn’t see any damage. This day and time, they would have a camera on me and would send the police after me.
I don’t think I have committed any more crimes. Oh, I have pulled a grape off at the produce section and tried it before I bought a whole bag of them. I may have parked in an illegal parking spot before, but I am not counting that. I also drove down a fire lane before that said, “Do Not Enter.” I guess I do have a history.
Now, that son of mine is the total opposite of me. I drove all over Mansfield without a driver’s license. My parents didn’t care. My son had his permit, and I asked him one day to drive down to CVS and get me something I needed at the store. He looked at me like I was crazy and said, “I am not driving to the store. It is illegal for me to drive alone!!”
Now, what kid wouldn’t jump at the opportunity to do that? Not Jacob Logan Hopkins, and he also abides by the speed limit. Oh, that’s another crime I have committed. I speed and roll through stop signs. I sure hope none of the Mansfield Police Department read this.
I guess I better try to do better. Ya’ll know I’m not going to. Until next week, ya’ll abide by all laws and watch out for my little silver car if you see me on the road.
My grandchildren love anything pumpkin—pie, bread, rolls, cookies, Debbie cakes, anything at all. I haven’t made this, but I am going to try it for them. Sounds super easy.
Pumpkin Pie
1 can (15 ounces) pumpkin puree
1 can (14 ounces) sweetened condensed milk
2 large eggs
2 teaspoons pumpkin pie spice
½ teaspoon salt
1 unbaked 9-inch pie crust
Whisk the pumpkin puree, sweetened condensed milk, eggs, pumpkin pie spice and salt together until completely smooth. Pour the mixture into your unbaked pie crust.
Bake at 425 degrees for 15 minutes. Turn the oven down to 350 degrees and bake an additional 35 to 40 minutes, or until a knife inserted near the center comes out clean.
