Smoked Sausage Nachos

One would be hard pressed to find nachos I don’t like. Unless the nachos have no cheese, in which case I don’t even count them as nachos. Cheese and tortilla chips with some sort of protein? I’m in. Add in all the veggies you want, I’m already ready to eat.

We had hot smoked sausage in the fridge that I didn’t have a plan for; I didn’t know I got hot instead of just regular smoked sausage until I was home. I kept looking at it trying to decide what I could do with it. Jambalaya or gumbo was an option, but summer is just lingering on and that seemed out of the question. And then I saw the jar of queso blanco. Oh. Now we are in business.

Ingredients

-7 oz package smoked sausage (hot or regular)

-1/2 bell pepper

-1/2 regular onion

-1 Tbs cooking oil of choice

-1/2 jar cheese dip of choice

-Bag of tortilla chips

Directions

  1. Preheat oven to 350.
  2. Slice sausage, peppers, and onions, add in pan with cooking oil. Sauté until vegetables are soft.
  3. Place chips on sheet pan, drizzle with cheese sauce, sprinkle sausage and vegetable mixture over.
  4. Place in oven for 8 minutes until cheese is heated.

City to Absorb James Fork Water Rate Increase

On Thursday evening, September 15, the Mansfield City Council met in regular session. All members of the council were present including Julie Thomas, James Steele, Beverly Lyons, Sheri Hopkins, and Bobby Musgrove. Also present, Mayor Buddy Black and Recorder/Treasurer Becky Walker.

After calling the meeting to order, the invocation and Pledge of Allegiance, Mayor Black welcomed visitors and guests.

After the reading and approval of the August 18, 2022 minutes and financials, the council heard the city services reports.

Mansfield Fire Chief Michael Smith reported a total of 29 calls, two fire and 27 EMS. He noted that the ladder truck had sold and that he was waiting on interested parties regarding the Freightliner. Smith concluded that all trucks were up and running and that he had worked over 160 hours this month.

Next, Police Chief Wayne Robb presented his report. In Scott County, there were eight citations, eight violations and one misdemeanor warrant served. For Sebastian County, there were a total of eight citations, 10 violations, five felony and two misdemeanor warrants served. In all, the agency had 54 calls, 21 agency assists (seven in Scott County and 14 in Sebastian County), 12 school calls, 10 medical calls, 12 total incident/arrest reports, three total accident reports, 62 total traffic stops, 44 warnings were issued, seven adult arrests and one animal call.

Public Works Director Joe Manes presented his departmental report, which included performing 96 work orders. Additionally, painting the parking lot stripes and safety lighting around the senior center building, replacing the display and relays on headworks at the sewer plant, a water tap for a new water customer, digging out ditches, and applying a second coat of chip and seal on the city lake road.

In the last report, City Attorney Travis Plummer discussed the yard sale ordinance. Yard sales are prohibited on city property with the exception of non-profit organizations. The council had previously voted to revise that ordinance.

In matters of unfinished business, Tracee McKenna, the Director of Community Development, WAPDD, was present. She discussed a plan to assist the city with possible grant funding to construct a new city hall. Currently, Mansfield City Hall is closed because of mold. McKenna will assist Mayor Black with a plan to get a more accurate reflection of residential income in hopes of procuring funding for future grants.

Next, the council discussed and confirmed the yard and ditch mowing responsibility of the homeowner. Ordinance 2021-6 states that homeowners are responsible for mowing their yard and their ditches. The city is responsible for mowing around fire hydrants and traffic signs.

In the last matter of unfinished business, the council voted unanimously to pay off the trash truck early, at $22,491.81. The early payoff saved the city a total of $453.01.

In matters of new business, the council voted unanimously to give city employee Sean Dickinson a $.50 per hour increase in pay.

The next item on the agenda, the requirement of a permit for food trucks and produce sales from parking lots. No council discussion or action was taken on this item.

Next, the council discussed the water rate increase from James Fork Regional Water. Mayor Black stated that the city will absorb the 20% rate increase and that they will not be raising water rates at this time.

The last item of new business, the unanimous approval to rebuild a submersible wastewater pump, totaling $4838.00 plus tax.

In announcements, Mayor Black shared that another layer of chip and seal had been applied at the City Lake Park and that after the first of the year, he anticipates the entire drive around will be completed.

With no other items on the agenda, the motion was made and approved to adjourn the meeting.

How a Bathroom Remodel Can Improve Your Life

We don’t always want to admit it, but we spend a lot of time in the bathroom. It’s where we brush our teeth, shower, and take care of other essential business throughout the day. However, for many of us, it’s a room that we neglect when it comes to new and exciting renovations, and it’s a good idea to think about how a bathroom remodel can improve your quality of life.

Increases Resale Value

One of the most obvious advantages of performing a bathroom remodel is how it may increase your home’s value if you’re ever looking to sell. While bathroom renovations can be costly, the initial investment can pay off with increased value. Even if you’re not looking to sell right now, you can enjoy the effects of the investment for yourself.

Fitting Your Personal Needs

One of the most significant ways a bathroom remodel can improve your life is that a remodel allows you to make changes to suit your wants and needs. If you ever felt like you wanted a higher countertop or a different style of mirror for your vanity, this is the ideal opportunity to make it happen. You spend a lot of time in this room, so it should be a room that accommodates your overall needs.

Improved Safety

It’s probably a safe assumption that not much work was done on your bathroom after the house was built. There may have been a few modifications here and there or repairs on broken pipes or wiring, but how much do you really know about the inner connections of your bathroom? Performing a remodel gives you the opportunity to make deep-rooted repairs you may not have otherwise considered. Remodels are a chance to check for rotted wood in the walls or floors or look for any mold or mildew from excess humidity. Finding and fixing these problems may add to the total cost but provide you with a safer, cleaner restroom that could help you save money in the long run.

Hogs Heading to “Jerry World” this Saturday to Battle the Aggies in the Southwest Classic

Arkansas returns to conference play on Saturday to face the Texas A&M Aggies in the renewal of the Southwest Classic. The game is a neutral site conference game for both schools that will be played at AT&T Stadium, home of the Dallas Cowboys. Kickoff on Saturday is set for 6 p.m. The game will be nationally televised by ESPN. As part of ESPN’s coverage, the network’s “SEC Nation” pregame show will also be there to highlight the game. It will be the second time this season that SEC Nation has selected the Hogs for their national game of the week; the first being their season opener in Fayetteville vs. Cincinnati.

Arkansas survived a non-conference scare last Saturday against a highly-motivated Missouri State team coached by returning coach Bobby Petrino. Among many issues for the Hogs in that game, the defensive secondary continues to be a liability for the defense, and on Monday, Hogs head coach Sam Pittman was considering possible changes to the secondary. Myles Slusher has been eagerly awaiting his return to action following an injury in the Cincinnati game, and it is possible that he was held out last week to be ready for the game against Texas A&M. Arkansas needs his speed and athleticism in the secondary.

Here are some notes on this Saturday’s game versus Texas A&M as provided by the University of Arkansas:

TEXAS A&M AGGIES (2-1, 0-0 SEC)
AP/Coaches Poll: 23/20
Head Coach: Jimbo Fisher (Salem [W.Va.], ‘90)
Career Record: 119-38 (13th season)
Record at Texas A&M: 36-15 (5th season)

ARKANSAS RAZORBACKS (3-0, 1-0 SEC)
AP/Coaches Poll: 10/10
Head Coach: Sam Pittman (Pittsburg State [Kan.], ‘86)
Career Record: 15-11 (3rd season)
Record at Arkansas: Same

• No. 10 Arkansas hits the road for the first time this year to take on SEC West foe No. 23 Texas A&M in the 79th edition of the Southwest Classic. Kickoff between the Razorbacks and Aggies from inside AT&T Stadium, home of the Dallas Cowboys, is set for 6 p.m. Saturday, Sept. 24, on ESPN.

• For the second week in a row, Arkansas is ranked in the top 10. The Hogs stayed put at No. 10 in the Associated Press Top 25 poll, marking the first time since 2012 that Arkansas has spent consecutive weeks in the AP’s top 10.

• The Hogs are off to a 3-0 start for the second straight year, a feat that had not happened at Arkansas since 2010-11. With a win against Texas A&M, Arkansas would improve to 4-0 in back-to-back years for the first time since 1988-89.

• QB KJ Jefferson continues to wreak havoc on opposing defenses through the air and on the ground. Jefferson has completed 55-of-78 passes (70.5%) for 770 yards and six touchdowns while rushing for 169 yards and three scores through the first three games of the season. He ranks second in the SEC and 15th nationally in total offense, generating 313.0 total yards of offense per game.

• RB Raheim ‘Rocket’ Sanders is the Razorbacks’ leading ball carrier through three games, totaling 440 yards on 66 carries (6.3 avg) with three scores on the ground. Sanders, who posted his third consecutive 100-yard rushing effort in the win over Missouri State, leads the SEC and ranks fourth
nationally in rushing yards (440) this season. His 146.7 rushing yards per game rank third in the country.

• WR Jadon Haselwood has helped lead Arkansas’ receiving corps through the first three games of the season with 13 catches for 158 yards (12.2 avg) and a pair of touchdowns. A transfer from Oklahoma, Haselwood has caught three or more passes in each of his first three games as a Razorback and has tallied at least one reception in 15 consecutive games dating back to the start of the 2021 season.

• LB Drew Sanders has turned heads with his play on the defensive side of the ball this season. A transfer from Alabama, Sanders has racked up 28 total tackles (16 solo) with a team-leading 6.5 tackles for loss and a team-high 5.5 sacks through the first three games. He is tied for the national lead in sacks with 5.5 and has tallied at least one sack in all three games this year, including multiple
quarterback take downs in each of the past two contests.

The game with Texas A&M is a game the Hogs cannot afford to look past anticipating a game with Alabama at home the following week. Defeating A&M this week would set up a raucous crowd at Razorbacks Stadium for a showdown with the Tide. But for now, it is all A&M, and if history plays out this weekend, the game should be another classic with a barn burner finish. The Aggies will be out to avenge last year’s loss to Arkansas, and Sam Pittman’s crew will be looking to play much better than last week in their conference game with Texas A&M.

It should be another great game in the long-standing series with this former Southwest Conference rival opponent. So….GO HOGS!

Types of Portable Generator Enclosures To Buy

People own portable generators for a variety of reasons. Unfortunately, these generators are vulnerable to weather and make a lot of noise. Avoid neighbors complaining about the generator noise and reduce the risk of elemental damage by learning about the types of portable generator enclosures to buy.

Walk-In Covers

A walk-in cover is a storage unit that comes with an attachment that allows for portability. The walk-in cover may be right for you if you need the space to store your generator so that workers can access it for maintenance checks and cleaning.

Some walk-in models contain fireproofing and offer additional storage for fuel and tools. One thing to note is that this model is expensive, so consider what your needs are before purchasing a walk-in generator protector.

Noise-Proof Protectors

Oh boy, generators are loud! You can combat noise pollution by opting for a soundproof enclosure. These enclosure types attenuate the noise in the surrounding area, creating fewer health hazards and reducing the risk of permanent hearing loss for neighbors and employees.

This enclosure is best for homeowners who live in densely populated areas. There are two types of noise-proof protectors: one that reduces noise and another that cancels it out. Make sure to read the product description to determine whether the cover reduces or blocks out noise.

Weather-Resistant Enclosure

The elements can deteriorate a generator over time. In that regard, the best type of generator protector is one with weather protection. If you live in or travel to climates that experience heavy rain and snow, the weather-resistant enclosure is the best choice.

The protective shell models differ, meaning not all will have the same protection. For example, a protective case for snowy weather may not protect against rain. It’s best to look over your options and the specific features a model has that will benefit homeowners.

A protective case is the best portable generator accessory for homeowners to use while at home or traveling. The enclosure provides many benefits, including extending the lifeline of your portable generator.

After all that you’ve learned about the different types of portable generator enclosures to buy, you can now begin your search for the right one. Start your search by defining your needs, as this will lead you to a suitable purchase.

High-End Countertops To Consider in a Kitchen Remodel

Countertops are statement pieces in all kinds of kitchens. In your next remodel, you need a countertop that matches the kitchen’s style but is also durable and practical.

If you’re in dire need of a kitchen remodel, learn more about high-end countertops to consider in a kitchen remodel to help you find the perfect new addition to your home.

The First Step of Choosing a New Countertop

First, you want to determine what features you need in a new countertop. Some of the features you may want to look for in countertops include:

  • Stain resistance
  • Heat resistance
  • Natural stone composition
  • Easy-to-clean surface
  • High durability

Marble Countertops

The classic look of marble countertops is a homeowner’s dream. These countertops will match any kitchen design with their gorgeous white surfaces and color accents.

Marble countertops require lots of time and care to sustain their bright, shiny beauty. Their porous material is vulnerable to stains and scratches. Marble is heat resistant, but leaving very hot pans on the surface can cause damage. If you’re looking for a quick-to-clean countertop, marble may not be the best option for your kitchen.

Soapstone Countertops

Soapstone countertops bring many advantages to your kitchen. For one, they come in many colors, giving you lots of options. You can decide which colors might fit best in your newly renovated space. Soapstone is also non-porous, easy to clean, and durable. It boasts high heat resistance as well.

Granite Countertops

Another high-end countertop to consider in a kitchen remodel is a granite countertop. This stone is durable and one of the most heat-resistant materials you can get. It’s an all-natural rock that’s porous. However, it’s still quite stain resistant. Sometimes, darker granite doesn’t require a sealant, but it’s always a great idea to use a sealant annually on all granite surfaces.

Quartz Countertops

Quartz countertops don’t stain easily and are scratch resistant. Just like soapstone and granite countertops, quartz is a heat-resistant material, and it won’t chip easily.

This elegant and modern design will match many kitchen styles in your next renovation. It’s durable, low maintenance, and non-porous. Quartz is a beautiful stone that could be the one you need for your newly constructed kitchen.

Countertops are among the most important features in a kitchen. Whether you’re searching for durability or just for that clean, sleek appearance, these high-end countertops are great options for remodeling your kitchen.

Hogs Survive Scare, Find a Way to Win…Defeat Missouri State 38-27

In RNN’s high school football coverage this year, we have made the point that sometimes a good football team has to find a way to win games when they are not playing their best on any particular day. For upsets to occur, there usually has to be the combination of an underdog team playing their best game versus a heavily-favored team that is not playing well and / or commits multiple turnovers to keep the underdog in the game. I am not necessarily saying this is what might have happened to Arkansas last night, but, make no mistake, former Arkansas coach Bobby Petrino had this game circled on his calendar for several months, and the Missouri State Bears were prepared for their trip to DWR Razorbacks Stadium.

The Bears outplayed Arkansas for three quarters, but in the end, talent and the will to win finally had its say in the Hogs victory. Arkansas was fortunate to win, and the final margin of victory does not accurately depict how the game went for much of the evening. Arkansas did leave a touchdown off the board when it appeared to be going into the end zone in the first half, the Hogs’ Rocket Sanders uncharacteristically fumbled at the one yard line and turned the ball over to Missouri State. It was that kind of night, and the Hogs were fortunate to come out on top of this one.

Arkansas coach Sam Pittman said after the game, ““Well, I want to congratulate Missouri State and Coach Petrino on a great game plan. He had his kids prepared more than I did. He did a wonderful job; they have a wonderful quarterback. Man did he make a lot of plays. We turned the ball over twice, but then Bryce Stephens returned a punt for the first time this year. We’re just so fortunate to win these game like this, you know if you are not playing well or the other team is playing well, or whatever the situation is, you’re just trying to fight and claw and get out with a win. There were several different times in the game where it didn’t look like we were going to win. Our kids just kept fighting and clawing and to come out with an 11-point win, that says a lot about the culture of our program and of our kids. I’m really proud that we won the game and I’ll leave it at that.”

Social media was buzzing during and after the game; some saying that two or three years ago, Arkansas would not have found a way to win last night’s game. Who knows if that is true, but, Arkansas did find a way to win just one week removed from a week in college football when several upsets around the country occurred, such as Appalachian State going into a packed Kyle Field and upsetting the heavily-favored Aggies. Sometimes, you just have to find a way to win, and, a little luck along the way helps.

Here are some highlights and statistics from the game as provided by the University of Arkansas:

» WR Ketron Jackson Jr. snared a career-long 64 yard reception in the first quarter.

» WR Matt Landers notched his third career game with 100+ receiving yards after totaling seven receptions for 123 yards.

» RB Raheim Sanders finished with a career high 167 rushing yards and a career high 75 receiving yards, inlcuiding a career-long 73-yard TD reception.

» Sanders is one of seven SEC players since 2000 to record 100+ rushing yards, 1+ rushing touchdown, 70+ receiving yards and 1+ receiving touchdowns in a single game.

» Sanders is the first Arkansas player since TJ Hammonds in 2017 against Coastal Carolina with 100+ rushing yard, 1+ rushing TD, 50+ receiving yards, 1+ receiving TD.

» Sanders has eclipsed the 100-yard rushing mark for the third straight game. He’s the first Arkansas running back to rush for 100+ yards in the first three games of a season since Jonathan Williams and Alex Collins each did so in 2013.

» QB K.J. Jefferson threw for a career-high 385 yards. His 19 completions and 31 attempts were season highs.

» In the first half, Jefferson completed 9-of-15 passes (60%) for 237 yards and a touchdown. His 237 passing yards at the half are the most he has thrown for in the first half of a game.

» Jefferson completed a season-long 73 yard pass to Raheim Sanders in the fourth quarter. It was Sanders’ second career receiving TD.

» Dating back to last season, Jefferson has rushed for a TD in four consecutive games. He is the first Arkansas QB to run for a TD in four games in a row since Quinn Grovey in 1988. He has thrown a TD and rished for a TD in all three games in 2022.

» Under head coach Sam Pittman, Arkansas has gained 400+ total yards of offense in 19 of 27 games, including six straight dating back to last season.

» Head Coach Sam Pittman is the first Arkansas head coach since Lou Holtz (1977-78) to win his first seven games against non-conference opponents.

» Saturday’s attendance of 74,133 is the highest-attended game against an FCS foe in school history.

» LB Drew Sanders posted his second consecutive game with double digit tackles and at least 1.5 sacks after finishing with 12, inlcuding a career-high 2.5 sacks.

» DL Jordan Domineck tied his career high in sacks with 2.0. Domineck now has 13 career sasks (the most by a current Hog).

» Bryce Stephens became the first Arkansas player to return a punt for a touchdown since Nathan Parodi did vs. UAPB in 2021.

» S Saimeon Blair tallied a career-high 10 tackles, including nine solo stops.

» Arkansas finished with eight sacks. Since 1999, the eight sacks in a game ties the most by the Razorbacks (8 vs Auburn in 2012 and 8 vs Texas in 1999. In addition to Drew Sanders’ and Domineck, Zach Williams added two sacks – a career-high for Williams.

At Bobby Petrino’s post-game press conference, the former Arkansas coach made the following statement:

“I’m really proud of our team and our assistant coaches. Did a really nice job of preparing, we had good practices, we came in and competed extremely hard, we had a good plan, and we were
able to jump up and get a lead. We knew it was going to be hard to hold on to it, but we got really good players and really good coaches, so we knew we were going to make a run back. I was
encouraged when we answered it and got another touchdown, but eventually they wore us down, made a lot of plays, and we let them beat us.”

On his team’s fearless mentality:

“Really proud of them. I think that we have really good leadership, we wanted to be tough, to try to match their speed and their physicalness, and I think for most of the night we did a pretty
good job of that. But nobody blinked, our guys played extremely hard. We just got to try to build on that. We’ve got a really tough game next week too, so it just keeps getting better.”

On what the game means for his program:

“I mean it’s been fun. It’s been really fun to watch the players’ beliefs change, how much more they believe in themselves now and how their expectations have changed. How they expect to
go through practice, how they expect their teammate to practice hard, so that’s been the greatest part of it, I guess, to watch their expectations change, to watch them grow and watch them
come together as a family.
We’re all from everywhere, our team is from all across the country. If you look at our roster, where are we recruiting at? Where’s our recruiting base? America, that’s our recruiting base. Because we’re from everywhere, and to be able to come together, says a lot about our assistant coaches and says a lot about the leaders on our team.”

Jason Shelley, Missouri State’s quarterback who continually hurt the Arkansas defense with both his passing and his running said after game, “I think we proved that we’re a team that’s hard nose and got a lot of effort and a lot of guys with talent and I think that kind of showcased today. We had a couple missed assignments here and there, but I think that cost us in the end. Overall, I think the guys came out and played hard. “It was pretty loud (the Arkansas crowd), but it’s always going to be loud when you’re the away team. We just have to handle the crowd and outside distractions, we’ll be alright. It’s kind of a learning experience. I don’t think we’re ever going to play in front of 80,000 again, but I think we’ll be alright.”

The Razorbacks are now 3-0 overall and 1-0 in the SEC and will turn their attention to returning to conference play next week when they travel to Arlington, Texas to play Texas A&M ar ATT & T Stadium. Kickoff is set for 6 p.m. and the game will be televised nationally by ESPN. According to ESPN, Texas A&M has a 57.8% chance to win the game. The Aggies defeated Miami last night at home to overcome the previous week’s upset loss to App State. Arkansas defeated Texas A&M a year ago, and this year’s game is huge for both schools in the SEC standings. Arkansas will return home to host Alabama on October 1.

Stay with RNN Sports this week when we bring you the Texas A&M game preview. But until then…GO HOGS!

Bulldogs Cruise Past Panthers

The Greenwood Bulldogs beat the Panthers 61-7 in Friday night action

The Bulldogs made the trek to Northwest Arkansas for their second round of 6A West Conference play. Siloam Springs came into the matchup 0-3 with losses to Rogers Heritage, Greenbriar and Alma.

Greenwood received the kick and went to work quick with Hunter Houston finding Grant Karnes for the TD the point after attempt would fail. Siloam Springs would get their chance to answer back but that would come to a halt, Landon Nelms would intercept the pass taking it deep into Siloam Springs territory. Houston would again find Grant Karnes on a pitch, Karnes would take it around the end for the touchdown. Kick would be good putting the score 13-0 with 7:35 left in the 1st Quarter.

Siloam Springs’ next drive would end with a punt. Greenwood would take over with Hunter Houston passing to L.J. Robins in the end zone. Steven Duran’s kick was good, score at 20-0. The next Panther drive would end like the previous with Siloam electing to punt. Hunter Houston spreading touchdowns around to his teammates finds Peyton Presson to put six on the scoreboard. The Duran kick would split the uprights getting the score to 27-0 with 2:17 in the 1st Quarter.

Siloam Springs would punt again and the ‘Dogs would take over at their own 44. Senior Running Back Jake Glover would take the hand off 57 yards for the Touchdown, Duran’s kick was good.

The defense would make their presence known on the next two possessions. Eli Whitaker and Brady Mackey would get back to back scoop and scores. The Steven Duran kicks would be good with the score sitting at 47-0. Siloam would have better ball control on the next drive but elect to punt. On the Greenwood offensive possession a fumble would be scooped up by Freshman QB Kane Archer and he would take it in for the touchdown of the half. Steven Duran would add the point after for the 54-0 score.

Siloam would punt on their next offensive opportunity. Archer would throw an interception on the next Greenwood possession, setting up Siloam deep into Greenwood territory. The Bulldog defense would stay solid and stop them in the Red Zone. Greenwood would then run out the clock to go into halftime 54-0.

Starting off the 2nd half, Siloam would punt on their first drive of the half. Archer would find Sophomore Scott Holland for the final Greenwood touchdown, point after was good score is at 61-0. In the 4th quarter Siloam would get points on the board making it 61-7. Both teams would trade punts to finish out the game.

Asked about the Defensive play “Give our defense credit, we had kids that were ready to make plays and they made it.” said Head Coach Chris Young. With the game in hand, as the Bulldogs have done in the past, the Bulldogs find themselves in a tough spot. “Ya know, it’s tough because you get those two’s in there and they deserve a chance. They practice their tail off all week and you want to get out there and run your offense and run your defense. At the same time you want to be respectful. They’ve (Siloam Springs) got a heck of program and they’re down a bit this year. Their coaches do a great job, so you have got to find that balance where you can run your offenses and keeping the score where it is.”

Next week the Bulldogs take on Van Buren on September 23rd at Smith-Robinson Stadium. It’s Homecoming Week, check with the Greenwood Schools Facebook pages to find the daily theme for Homecoming Spirit Week.
