Coconut-Crusted Pork Tenderloin

Makes: 4 servings | Yield: 8 medallions | Prep 20 mins | Marinate 2 hrs to 3 hrs | Cook 6 mins

Ingredients

  • 3/4 cup unsweetened canned coconut milk
  • 2 tablespoons finely chopped fresh ginger
  • 4 cloves garlic, minced
  • 1/2 teaspoon sea salt
  • 1/4-1/2 teaspoon cayenne pepper
  • 1 1 1/2 – pound pork tenderloin
  • 2 eggs
  • 1/4 cup chopped raw macadamia nuts
  • 1/4 cup unsweetened shredded coconut
  • 1 -2 tablespoons coconut oil

Directions

  1. For marinade, in a bowl combine the first five ingredients (through cayenne pepper). Trim fat from meat. Cut meat into 8 slices. Using the flat side of a meat mallet, flatten pork slices between two pieces of plastic wrap to 1/2 inch thick. Add meat to marinade; turn to coat. Cover; refrigerate 2 to 3 hours, turning meat occasionally.
  2. In a shallow dish beat eggs. In a food processor combine macadamia nuts and coconut. Cover and pulse just until mixture is finely chopped.
  3. Remove meat from marinade; discard marinade. Dip meat slices in egg, turning to coat. Lightly sprinkle both sides of meat with nut mixture. In a large heavy skillet cook pork, half at a time, in 1 tablespoon hot oil over medium-high heat 2 to 3 minutes per side or until meat is slightly pink in center. Add 1 more tablespoon oil if needed when cooking second half of pork. Serve pork with Paleo Mango Salsa

Paleo Mango Salsa

Ingredients

  • 1 lime
  • 1 1/2 cups chopped mango
  • 3/4 cup finely chopped red sweet pepper
  • 1/4 cup thinly sliced green onions
  • 1 Scotch bonnet or hot green chile pepper, seeded and finely chopped*
  • 2 tablespoons coconut oil
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper

Directions

  1. Remove 1/2 teaspoons zest and squeeze 2 tablespoons juice from lime. In a bowl combine all ingredients.

Mansfield City Council Meeting (June)

The 2nd public hearing regarding the implementation of an Arkansas Community and Economic Plan (ACEDP) for the Mansfield Community Center/Dixie Theater project #790-08901-15 was held at 6:45pm, before the City Council convened.
The purpose of this hearing was to inform the citizens of the current scope and progress of the ACEDP project and to discuss any changes or impacts involving financing sources that have occurred since the first hearing.
The Mansfield City Council held their regularly scheduled meeting, at Mansfield City Hall, Thursday, July, 22, 2017. In attendance were City Council members – Dave Johnson, Nathan Sterling, Georganna Mabry, Beverly Lyons, Rick McDaniel, Sheri Hopkins, Mansfield Recorder/Treasurer – Becky Walker, Mansfield Mayor– Larry Austin, Mansfield Fire Chief – Stephen Haysmer, (Acting) Mansfield Police Chief – Stephen Westbrook, as well as a many citizens and business owners of our area.
Meeting called to order at 7:02 p.m.
Reading of the Minutes, and Financial Statements
While reading the minutes several questions were asked by the Council Members, to the Mayor regarding how things are budgeted, why funds are allocated towards certain items, and mentioning being “over budget” in most all areas.
The focus of the questions were primarily centered around the cost of newly constructed walking trail, and how much was owed towards paying it off.
Mabry – Motion, Johnson 2nd, Motion Passed to accept the minutes.
Mansfield Public Works Department
Ryan Hushka, represented Director of Public Works, Wes Thomas stated everything is going good, clearing ditches for water flow, resetting of Hwy 71 stoplight, and trash truck is back in operation – Mayor Austin, added “trash truck repairs are costly to say the least”
Mansfield Police Department – No report was given.

Mansfield Fire Department
Chief Haysmer, stated  “We’ve been doing a lot of training keeping up with changing trends in equipment, and rescue procedures. We’ve responded to one accident, and supported Hartford on one call. All is well.”
McDaniel asked about the current situation concerning the AED which was brought up in May. Haysmer responded “We’ll be presenting an option soon that is not as high priced as we thought.”
“This is not a new problem”, stated Mayor Austin. Councilman McDaniel, responded “No, but we should have done something about it when we were made aware of this. That’s the problem.”
City Attorney – no report
Mansfield Recorder/Treasurer – Becky Walker stated that the 4th of July festivities will be that Tuesday, “Just Us” will be performing, with the make-up date being July 8th.
Unfinished Business
A) Wireless Proposal – WOW – No representation present – City Attorney presented a reviewed copy of proposed contract
B) Waterline, Henley Road (Easements) – City Attorney has finished the proposed copy of the easement paperwork. “If no easements are signed by the neighbors, “we’ll go around them.” – Mayor Austin
C) Meter Tap & Meter Fees – “After reviewing other towns fees, we’re in the ballpark. In order for us to change/revise the fees, we have to pass an ordinance.” – Mayor Austin
Highway dept has their own fees for non-city, and non-county roads.
McDaniel – “Costs of the taps themselves cost more than what we’re charging. Taps will continue to rise in cost, from here on out. We need to look at current prices or taps, and balance ours according to adjoining towns.”
New Business
A) Zoning Proposal, Ordinance – Referenced map to proposed ordinance in regards to portable housing within the city limits. Manufactured homes have to meet HUD codes.
McDaniel responded to the definition of mobile housing, vs. manufactured homes, and stated the regulatory codes per the State of Arkansas.

B) Water Meters, Hydrant Locations – Contract, WAPDD – Computerized map of shutoff valves, meters, & hydrants, lines, etc., Up-gradable program, add to existing map, GPS on the phone. 1st year would cost approx. $4000.00, includes rural meters, this would be in 5 phases, 1 person maps this at $40 per hour, last job took her 2 weeks

Council Member, Sheri Hopkins“I’m curious about grant money for asphalt paving our new roads.” Mayor Austin responded, “We’ll look at doing this next year. The road from Elementary school to Middle school is on the list.”
Council Member, Nathan Sterling – “What about those bridges?” Mayor Austin responded,  “They’re in great shape, just not wide enough.”
Council Member, Rick McDaniel“Are you going to tell us anything about the new business coming to Mansfield? Mayor Austin responded,  “They’re currently looking into doing the dirt work.”
Mansfield Resident, Bobby Musgrove“Whose responsibility is it for vegetation growing over the streets obstructing the views? Mayor Austin responded,  “The City of Mansfield. We’ll look at that.” Musgrove, added “It’s past the point of bad, and someone is going get hurt.”
Mansfield Resident, Robert Walker“is there a parks committee? Do we have a 20yr plan about the City Lake? Mayor Austin responded, “Yes, there is a parks and recreation committee.”
 
Community Members, Amanda Wilson, and Al Bryant gave their perspective on the current state of the roads, especially between the Elementary and Middle School. Both are concerned for child safety, and traffic congestion. Mayor Austin responded, “I believe that’s a school issue, and not a city issue.”

Bentley Recaps Youth Football Camp

28 youth from around the Mansfield Area participated in the 2017 Mansfield Tiger Youth football camp.
Kids of all ages learned the fundamentals of offense and defense, including proper tackle technique. They also participated in a number of competitions including the Punt Pass and Kick. Go Red Tigers!

Tigers Compete at All-Arkansas Varsity Combine

Mansfield Tiger football players Colton Stipins, Jaicy Griffin, Ethan Stovall, and Layton Howard (pictured Left to Right) participated in the All-Arkansas Varsity Combine In Little Rock on June 3rd.
All four players set personal bests in many of the areas that they tested in. They also gained exposure for themselves and the Tiger football program.
Sophomore Jaicy Griffin was named the Safety MVP of the camp.

MMS Utilzes STEM for Fun, and Learning

Congratulations to the Mansfield 5th/6th grade STEM Team on a job well done at the Paris STEM Olympiad on May 5. Overall there were 17 school districts, 4 private schools, and some home school groups participating with approximately 1,000 project entries from grades 5-12. Led by their 5th/6th grade science teacher, Kandis Howard, Mansfield competed in six events within the 5th/6th grade division. Mansfield came home with 6 of the 18 top honors, completely dominating the people-powered cars event, taking 1st, 2nd, and 3rd place. Seth Carter, Braxton Byers, and Clint Stovall won 1st place by a good margin, going a distance of 169 feet. Greyson Baggett, Caleb Collier, and Clint Stovall came in 2nd with a nice distance. Chandlan Silvey and Travis Martin wrapped up the car event with 3rd place. In the catapult event, Chandlan Silvey and Travis Martin took 1st place with a distance of 83 feet 2 inches. Julia and Ryan Sadoski earned 3rd place in the Egg Buggy category, and Zach Hayslip and Tyler Turnipseed also placed 3rd in the toothpick bridge event. Way to go, Tigers!!

Football Camp Readies Local Teams

Area football teams descended upon Hackett Hornet territory this past Tuesday to test their skills, and preparation against teams who they’ll see in the Fall, and a few they won’t see again.
Soon after 9:00am, the air was filled with sounds of whistles, and voices from the stands. The sounds of impact on the field echoed along the 100-yard area where teams collided against each other on both sides of the 50-yd line.
Teams took turns on both sides of the ball, rotating throughout the morning facing opponents testing their offensive, and defensive strategies, and formations.

“It’s a good way to start the Summer right, heading into Fall. At this point it’s about conditioning, and working out the kinks. Having a 7 on 7 camp the night before against Alma, gave us an opportunity to evaluate our guys on how they respond when they are tired. We are in the process of trying to put a couple of pieces in place. This Camp (along with everything we do leading up to the season) helps us evaluate our guys and where they best fit.” – Coach Lonnie Hester.

Southwest Pulled Flank Steak

If you ever visit Texas (or Mexico for that matter), you’ll notice that there are a TON of different taco options. It can be pretty overwhelming for a taco newbie. And while most people in the south are “Texas-polite” and patient, all courtesy goes out the door if you hold up the taco line. Lol

One of my favorite tacos is barbacoa. It’s a cross between roast beef and fatty brisket, in my opinion. It’s slow cooked beef chuck and it’s delicious. Admittedly, it’s even more delicious when you’re eating it outside the taco stand, while the sun beats down on your face and you’re chasing this savory, spicy deliciousness (wrapped in corn tortillas) with a chilled Topo Chico. This is life, bro!

Anyway, I don’t have a taco shop – not yet anyway ???? – and I love slow cooking on the weekend because I can chillax (chill + relax) on the couch or catch up with friends/family while my food prepares in the background. So, here’s a huge cheers to the weekend with my southwest style pulled flank. Great recipe for (weekend) meal prep!

Ingredients for at least 8 servings of 4oz

  • 2 lb raw lean flank, beef or buffalo
  • 1/3 cup red onion, chopped
  • 1/2 tablespoon cumin
  • 1 tablespoon chili powder
  • 2 heaping tablespoons tomato paste
  • pinch of sea salt & pepper
  • 1/3 cup water
  • Garnish
    • fresh lime
    • fresh chopped cilantro
  • olive oil spray

Steps

  1. Spray the slow cooker with olive oil, then add the flank steak.  For best results, it’s best if the flank steak is not rolled – try as much as possible to lay it flat. Add the rest of the ingredients, give it a quick stir, then cover and cook on high for 4 hours or on low for 6 to 8 hours.  Alternatively, you can also use a dutch oven and cook for about 2 to 3 hours on low heat.
  2. When the meat is about 85%  complete with the cooking cycle, gently pull it apart with forks, then allow it to cook for the remaining time in it’s own juices.
  3. Season to taste with sea salt, pepper, fresh lime and cilantro
  4. Enjoy this warm, or even cold the next day in a lunch burrito!

155 calories, 1g carbohydrates, 5g fat, 24g protein, 0g fiber, 1g sugar
