Sports and Academic awards week at LHS

Yesterday May 16 2019, was a very busy day at the Lavaca High School. The senior class of 2019 made their “graduation walk” through the halls of the elementary school. They also had graduation practice, year end awards assembly, and ended with the annual Lavaca Golden Arrow Sports Banquet.

As the graduates made their walk, the elementary students cheered them on and wished them well. As pride swelled up inside each of these seniors, it is left to wonder if they realized just how far they have come since the days that they sat in these halls cheering on past seniors. For some, “I cant believe this day is finally here”, others “Thank God… I made it”, others still “ where did the time go?” Some may be glad to be done, while others are saddened that its about to be over. All of them, however, have much to be proud of. They have accomplished, they have persevered, they have overcome. They walk through the halls of the elementary school deserving of the honor and respect that was duly shown to them.

After the walk, LHS held their annual awards assembly today. There were ten seniors who received Honor Stoles. There were also, countless other student awards that were given. Mrs. Rita Perry was also recognized for her years of service by John Thurston, a representative for Arkansas Secretary of State, as this year’s Teacher of the Year. Congrats to all!

City Council Talks Park Improvements

The Mansfield City Council met in regular session on Thursday evening, May 16. After approving the minutes and financial statements from the April meeting, the council moved on to items of new business.

Recorder/Treasurer Becky Walker reported on the success of the recent fundraiser for the Dixie Theater and shared the upcoming event on May 18 with Southern Reign.

Public Works Director Charlie Little reported on progress at the Connie McConnell Memorial Park. He revealed plans for a new slide to be added in the near future. That slide has been selected and purchased by Darlene Boyd. Mayor Buddy Black said that a plaque honoring Boyd will be placed near the slide to honor her. “She spent a significant amount of money on this slide, and we want to thank her,” stated Black.

Little also shared the improvements that have taken place in renovating the benches at that park. Lastly, Little commended the Arkansas Game and Fish Commission for donating gravel to be spread around the City Lake park and those who volunteered their time for the United Way Day of Caring.

Next, Mayor Black reported that the Fire Chief, Stephen Haysmer had resigned on Saturday. – See related story Additionally, Black reported the results of the pump tests done on all three fire trucks. Those trucks all passed, but have issues that need to be addressed. The city is waiting on an estimate for those repairs.

Next, Chief Wayne Robb reported on the police department. He shared that several members of the department are undergoing online training, and that Officer Kelly Perez is in her third week at the Police Academy.

The City Attorney, Matt Ketcham, is continuing to work on several new city ordinances. He discussed the need for the city to address the new medical marijuana laws and that there needs to be an ordinance in place. “I don’t recommend that you over regulate it, but I think there needs to be some boundaries set on where you can and cannot be smoking it,” said Ketcham.

In matters of unfinished business, Black shared that ARDOT would be delivering and placing new signs to direct traffic onto the main highway. Also, the council voted to accept the planning commission’s recommendation to close the alley on Gipson Lane and revert it back to private property.

Members of the council also approved the motion to service the Hartford area for trash pickup. Black noted they added 240 customers and will net $27,260.00 with the addition.

Black shared the results of a recent smoke and dye test done by Landmark Engineering. The test was done to evaluate the necessary upgrades needed to accept liquid waste from the Mansfield Juvenile Treatment Center. “We will be getting some much needed upgrades,” stated Black. The upgrades will come at no costs to the city.

Next, a representative from WOW, World of Wireless, sought the council’s approval to install a wireless internet transmitter. The motion was made and passed unanimously.

The city’s grant writer, Shelby Allen, updated the council on the status of grant applications. Allen has applied for a Firehouse Sub grant in the amount of $14,500. The council approved resolution 2019-4 to “bring the fire department up to standards.”

Lastly, the council voted to approve the purchase of a new police vehicle and an ordinance to deposit all pension checks on the first business day of the month.

Alderman Beverly Lyons made the motion to amend the agenda to go into executive session to discuss the appointment of a new fire chief. After reconvening, the council was unable to reach a consensus. Black stated “we will continue to work towards finding a replacement.”

Tiger Football In Full Bloom

The time has come. I can already smell the popcorn and hear the excitement from the stands. The blanket of red on the MHS practice field can only mean one thing. Football season is near!!! May 13 kicked off the beginning of football practice for the Sr High players. With a week under their belt, I checked in with Head Coach Craig Bentley about his thoughts on how practice is panning out.

“We have to really establish our offensive and defensive lines. That’s the main area of focus now. There is a lot of potential there, we just need some guys to really step up and take ownership in those roles. As of right now, we hold 27 players on the roster.”

“This summer, we want to make sure we iron out any wrinkles on both sides of the ball, improve strength and conditioning, stay healthy, and continue to develop as individual football players. We will also be looking forward to our Mom and Dad’s nights and our team trips this summer.”

The Mansfield Tigers will be losing Coach Dustin Payne as he takes his coaching career on a different path. “We hope to have Coach Payne’s replacement in place by next week. Coach Payne did a great job for us. He was a great relationship builder with our players and he will be missed. We wish him the best of luck at Alma.”

Hornets Hold BFS Clinic

On Wednesday, May 15, Hackett held a Bigger, Faster, Stronger training clinic for all Hornet athletes grades 6-11. BFS training is used in athletic programs all over the country as a tool to help increase speed, strength, and agility in student-athletes.

The mission of BSF is to encourage a positive change in the lives of young people. It works by first laying down a foundation of strength and conditioning training for athletes and coaches. And then offers support for the coaches through materials used to help increase safety and effectiveness in the sports programs.

Bigger, Stronger, Faster is used in helping to unify students and coaches from every sport under the same strength training program while striving for the ultimate goal of greatness. BSF teaches athletes the proper training for core lifts, speed, flexibility, and educates in nutrition. Come the start of the 2019-2020 Hackett school year, these Hornets are looking forward to showing off the results of this program.

Catalina Taco Salad

It’s a running joke in the church that you aren’t Pentecostal unless you have potlucks, although I’ve heard that it’s popular with the Baptists as well! Either way, most all churches love to have fellowship dinners. Since I talk a lot and love to cook, I absolutely love church “get-togethers.” This recipe is one I’ve crafted from the help of my mother. As a kid, this was her go-to recipe item to make for Sunday fellowship dinners. I don’t actually remember ever having this for dinner as a kid, but I always remember my momma making it for church functions. This past weekend, it was only fit that I make this dish for Mother’s Day and our Decoration Dinner. It’s simple, easy, and doesn’t heat up your kitchen in the summer time. It’s also not extra fattening if you just load up with more veggies than dressing or corn chips.

Ingredients:

  • 1 Bag of Corn Chips
  • 1 1/2 pounds of Cooked & Scrambled Ground Beef
  • 1 Head of Lettuce
  • 1 Bag of 8oz Taco Shredded Cheese
  • 1 Small Can of Red Beans
  • 1 Bottle of Catalina Dressing
  • Optional: Tomatoes, Olives, Peppers, and Onions

Instructions:

First, the night before serving the taco salad, scramble ground beef in a skillet until cooked thoroughly. If you do not have time to cook your meat ahead of time, then simply cook the day of, but make sure before adding your meat to the salad that it has completely cooled so that way it does not wilt the lettuce when making the taco salad. Next, after meat is cooked, place in a zip lock bag in the refrigerator overnight until you are ready to make your salad. When you are ready, remove and place in the microwave for approximately 1 to 2 minutes. You do not want to warm up your meat completely, but you do not want the meat to be ice cold either when you add it to the salad.

Shred your head of lettuce and add to a large bowl. Next, add your cheese (about 3/4 of the bag) and scrambled ground beef. Stir gently. Next, open the can of beans and drain all excess liquid and add beans to the bowl of salad. Now, add your corn chips and stir lightly again.* Add any optional vegetables you would like. After serving a portion, this taco salad is delicious topped with Catalina dressing! But, if you are watching calories, be careful about how much dressing you add! You can always switch this up and add a different type of dressing if you would like. Enjoy!

*Tips*- If you are eating this dish at home, I would not add your corn chips to the taco salad while making it. Just add to each serving instead. This way if you have leftovers and you refrigerate them, you won’t have soggy corn chips the next day. I only add the chips ahead of time if I am taking the dish somewhere because it is less hassle.

It’s yummy! It’s light! It’s dinner time!
